The Formulas

Celsius → Fahrenheit

°F = (°C × 9/5) + 32

Fahrenheit → Celsius

°C = (°F − 32) × 5/9

Fan Oven Conversion

Fan °C = Conventional °C − 20

Understanding Gas Marks

Gas marks are a temperature scale used on gas ovens in the UK and some Commonwealth countries. Each gas mark corresponds to a specific temperature, starting at Gas Mark ¼ (110°C) up to Gas Mark 9 (240°C). They're incrementally spaced: each whole number represents roughly a 14°C (25°F) increase.

Fan vs Conventional Ovens

Fan ovens (also called convection ovens) use a fan to circulate hot air throughout the oven. This means food cooks more evenly and often more quickly. The standard conversion rule is to reduce the temperature by 20°C when converting from a conventional recipe to a fan oven.

For example, if a recipe says “bake at 180°C”, use 160°C in a fan oven. You may also need to reduce the cooking time by about 10%.

Frequently Asked Questions

What gas mark is 180°C?
Gas Mark 4 is approximately 180°C (356°F). This is one of the most common baking temperatures, used for cakes, biscuits and many other recipes.
What is the difference between fan oven and conventional oven temperatures?
Fan (convection) ovens circulate hot air, cooking food more evenly and efficiently. As a general rule, reduce the temperature by 20°C when using a fan oven compared to a conventional oven recipe. So 180°C conventional = 160°C fan.
What temperature is a moderate oven?
A moderate oven is typically 160–180°C (325–350°F), or Gas Mark 3–4. This is the temperature range used for most baking recipes.
